These are a favorite in my house…. it is super easy to make (takes about 20 minutes total!), healthy, and can go with different meals.

Alright, I know you want the details…
PrepTime: 15 minutes
Cook Time: 10 minutes
2 per serving
1lb extra lean ground chicken
1-2 tablespoons sea salt
1 tablespoon dried parsley
1/2 teaspoon each of garlic powder, onion powder, dried thyme, and black pepper
1/4 teaspoon each of nutmeg, ground cloves
pinch of red pepper flakes
1-2 tablespoons coconut oil (or oil of your choice)
Mix chicken and all species together (I suggest using a glass bowl). Make sure everything is well mixed. Use your hands! Side note: I don’t always have the exact spices it calls for… so this is not an exact science. Use what you like. Just be careful not to make the flavor overpowering (I did that once!).
Roll the chicken into small balls (makes 7-8). Heat oil of your choice in a skillet and cook ~ 4 of the patties (depending on how big your skillet is). Repeat with the other 4.
That is it!
With a sweet potato and asparagus, on top of a salad, or in a pesto pasta dish. I usually have them with sweet potato and a green veggie at night and then on top of a salad for lunch the next day.
